5 Ingredient Buckwheat Bars

These delicious Buckwheat Bars are Gluten-Free and vegan friendly.


Stonelodge 490g Date Hunny
4 tbsp coconut oil
4 tbsp peanut butter or nut butter of choice
2 cups sprouted/ hulled buckwheat or 4 cups puffed rice
Nova Dark chocolate


  1. Line a medium sized baking tray with wax paper
  2. Combine the Date Hunny, coconut oil and nut butter in a food processor
  3. In a large mixing bowl, gently fold the puffed rice/ buckwheat into the wet mixture
  4. Spread the mixture evenly over the baking tray and refrigerate for at least an hour
  5. Using the Bain-Marie method, slowly melt Nova Dark chocolate with 2 tbsp of coconut oil
  6. Once melted, remove from the heat and glaze the top of the base
  7. Refrigerate
  8. Only when fully hardened and cooled, cut into squares or rectangles

*For a crunchier texture use buckwheat. However, for children and elderly people, the puffed rice is preferred for a chewier texture
*Can be rolled into balls if bars aren’t to your preference
