Not only does a marinade with fresh herbs reduce your risk for cancer, it’s also good for making your meat or vegetables taste good without needing to add unhealthy fats.
This recipe is very simple, but allowing your meat to sit in this mixture for at least 30 minutes before cooking will significantly reduce the number of carcinogenic compounds created during cooking.
½ cup olive oil
¼ cup red wine vinegar
4 garlic cloves, chopped
⅓ cup chopped fresh thyme or oregano
¼ cup chopped fresh rosemary
2 Tbs. chopped fresh basil
¼ cup lemon juice
½ tsp. black pepper
½ tsp. salt
- Combine the ingredients in a bowl.
- Put the meat into the mixture, and let it sit for 30 minutes or more.
- Then braai away
