Coconut Quinoa Porridge with Camu Chia Berry Compote

This berry compote recipe is dairy-free, sugar-free, and gluten-free.

Ingredients

  • 1 Cup Quinoa, rinsed
  • 1/2 Cup Water
  • 1 Can Coconut milk
  • 1/4 tsp cinnamon
  • 1 Tbsp Coconut sugar
  • 1/4 tsp vanilla powder
  • Pinch salt

 

Method

  1. Add all ingredients into a saucepan.
  2. Bring to the boil then simmer for 15 – 20mins until cooked, stirring occasionally.
  3. Serve with Camu Chia Berry Compote (recipe below), spiced almond & coconut flakes (recipe below) and a sprinkling of goji berries to top it all off.

 

Camu Chia Berry Compote

Ingredients

  • 1 Cup Mixed Berries
  • 1 Tbsp Chia seeds
  • 15ml / 1 Tbsp liquid raw honey
  • 1 tsp Camu Camu powder

Method

  1. Cook berries and chia seeds in a saucepan over a medium heat until a jam-like consistency is achieved.
  2. Remove from heat and let cool.
  3. Mix in raw honey and Camu Camu powder.
  4. Serve over Coconut Quinoa Porridge.

 

Spiced Almond & Coconut Flakes

Ingredients

  • 2 Tbsps Almond flakes
  • 2 Tbsps Dried Coconut flakes/slices
  • 1/4 tsp cinnamon

Method

  1. Add all ingredients to a non-stick pan and dry roast until fragrant.
  2. Serve over Coconut Quinoa Porridge and Camu Chia Berry Compote.
