These Low Carb Coconut Lemon Drops are gluten free, and sugar free.
These low carb healthy fat treats are wonderful to enjoy in the summer heat.
Quick & easy to make!
- 115g butter, melted
- 3/4 cup coconut oil, melted
- Juice of 1 lemon
- Zest of 1 lemon
- 50g desiccated coconut
- 115g full fat cream cheese
- 1/4 tsp vanilla extract
- 1/3 cup erythritol
- 1/3 cup coconut cream
- Add all ingredients to food processor and mix till smooth.
- Dont worry if cream cheese and butter appear separate. This will not be noticed in the end.
- Place mixture into silicon mini muffin moulds (I used a tray of 24).
- Pop into the freezer for 30mins or until set.
