Low Carb Coconut Lemon Drops

These Low Carb Coconut Lemon Drops are gluten free, and sugar free.

These low carb healthy fat treats are wonderful to enjoy in the summer heat.

Quick & easy to make!

Ingredients:

  • 115g butter, melted
  • 3/4 cup coconut oil, melted
  • Juice of 1 lemon
  • Zest of 1 lemon
  • 50g desiccated coconut
  • 115g full fat cream cheese
  • 1/4 tsp vanilla extract
  • 1/3 cup erythritol
  • 1/3 cup coconut cream

 

Method:

  1. Add all ingredients to food processor and mix till smooth.
  2. Dont worry if cream cheese and butter appear separate. This will not be noticed in the end.
  3. Place mixture into silicon mini muffin moulds (I used a tray of 24).
  4. Pop into the freezer for 30mins or until set.
  5. Enjoy.
