Low Carb Pita Bread

Here’s a great low carb substitution for not just pita bread, but naan / flat bread too. Quick & easy to make. Serve on a meze platter alongside soup or curry, top with your favourite ingredients or simply eat hot with melted butter.

(Low carb, dairy-free, gluten-free, sugar-free)

Makes 5 – 6

Ingredients

  • 600g cauliflower florets
  • 1 Tbsp coconut flour
  • 2 large eggs
  • ½ Tbsp fine psyllium husk
  • 1 tsp mixed herbs
  • 1 tsp salt

Method

  1. Steam cauliflower until soft, allow to cool
  2. Using muslin cloth/nut milk bag, strain out all water from cooked cauliflower
  3. Mix with remaining ingredients to form a dough
  4. Separate into 6 balls, then flatten out into circular pita’s 3mm thick
  5. Dry fry in a hot pan until golden
  6. Serve
